Mary poured herself a fresh cup of just-brewed coffee. She held the cup under her nose and breathed in the aroma.. She took that first sip– and Mary was disappointed.
Her coffee wasn’t exactly bad. It just wasn’t as good as the sample she tried before buying these gourmet coffee beans. Mary just didn’t understand…

Later that day, Mary found herself back at the coffee roaster. She had to know…
After Mary described how she made coffee, the owner asked the key question:
“What kind of grinder do you use?”
“I use the grinder I bought at the department store when I bought my coffee maker…” Mary answered.
“Let me guess– it looks like there’s a little wing in the cup, it sounds like a jet plane taking off and it cost you about $15″ said the coffee master.
Mary nodded.
“There’s your problem. Those machines were never intended to grind coffee. In fact, they don’t. They chop the beans. A grinder like you have works great for chopping herbs and spices, but not coffee.
“The friction caused by the blade spinning at high speed through the coffee beans can actually scorch your coffee. Scorched coffee just doesn’t taste as good.”
Mary nodded again. “So what kind of grinder do I need?”
“To get the best coffee, you should look for a grinder that
> uses steel burrs to grind the beans
> has adjustable grind size so you can fine-tune your brew
> grinds at slow speed to avoid scorching the beans
> is fairly quiet, powerful and looks good on your counter and
> is easy to clean.”
Dreaming of the heavenly coffee now within reach, Mary asked the coffee roaster if he could recommend a grinder that did all that.
“I do have one model I can show you. It’s slightly pricey, but you’ll probably never buy another coffee mill. And it just happens to be on sale right now. Let me show you…”
He started toward the back of the shop, Mary eagerly following…
